Chef Ryan Poli of Tavernita, a favorite of Beauty and Her Feast and one of Chicago's best restaurants, is our guest chef demonstrating ceviche. While I've made ceviche for years, I was eager to work alongside a chef with intense training from Spain. And let me say…my ceviche is nothing like Ryan's! His beauitfully layered kona kampachi is a surprisingly simple dish you can make hours before guests arrive.
