Who would have thought…snails on bruschetta. But it totally works. Chef Zoë Schor of Ada Street walks me through what sounds like a difficult and scary dish to prepare and makes it, snap, so easy. So easy, I think it's sort of crazy that people don't cook more often. Or why don't people try cooking something a little out-of-the-box? Remember when your mother told you not to play with your food? I'm now telling you, play with your food. Get creative and try pairing things that you wouldn't normally consider. Chef Zoë inspired me to go the market, walk around and experiment with different flavors. Her snails, white bean puree, crispy prosciutto, peas and mint on crusty bread was a simple dish with lots of flavor.
I can already hear whimpering about the snails. Stop. Attempt something new. Ada Street is a great place to dine for exactly this reason. You walk away thinking, "Why didn't I think of that?"
