Roasted Carrots with Honey and Lime

Ingredients

• 12 carrots peeled, haled lengthwise and cut into 2
• 1/4 cup olive oil
• 1 lime
• 1 tablespoon honey
• to taste kosher salt
• to taste freshly ground pepper

Instructions

1. Preheat oven to 400 degrees F. In a measuring cup, whisk olive oil, lime juice, honey, salt and pepper. On large rimmed baking sheet, toss the carrots with the oil mixture. Roast in the oven for 30-35 minutes, turning at least once.
