Ingredients
- 12 carrots peeled, haled lengthwise and cut into 2
- 1/4 cup olive oil
- 1 lime
- 1 tablespoon honey
- to taste kosher salt
- to taste freshly ground pepper
Instructions
- Preheat oven to 400 degrees F. In a measuring cup, whisk olive oil, lime juice, honey, salt and pepper. On large rimmed baking sheet, toss the carrots with the oil mixture. Roast in the oven for 30-35 minutes, turning at least once.
