Peas are an obvious springtime side. But even when you can't find fresh peas, frozen are fine. This recipe is quick and easy. I also wanted a savory profile that would work with any protein. You can switch out the leek for a shallot, or add another leek to instensfy that flavor. It's a great dish for parties too!
This is a simple dish that can be paired nicely with any protein. The sweet tender peas are balanced by the savory flavors of the shiitake mushrooms and the thyme.
Braised Peas with Shiitake Mushrooms

Ingredients
- 1 bag of frozen peas or 14 oz of fresh shelled peas
- 1/2 lb shiitake mushrooms stems removed
- 1 leek sliced and rinsed
- 3 tablespoons unsalted butter
- 3 sprigs fresh thyme removed from stems
- 3/4 cup mushroom broth
- kosher salt/pepper
Instructions
- Slice the shiitake mushrooms and set aside.
- Melt the butter in a 12-inch skillet over medium heat. Add the leek and cook until it softens.
- Add the shiitake mushrooms and brown. Add the peas, broth and thyme.
- Increase the heat and stir well; season with salt and pepper.
- Reduce the heat and simmer until the peas are tender, about 3 minutes, allowing the flavors to meld. Season to taste and serve.
